Ingredients

  • 1 lb (450 g) ripe peaches
  • ½ cup (120 ml / 4.1 fl oz) full-fat coconut milk
  • 2 cups (480 g / 16.9 oz) plain Greek yogurt
  • 3 tbsp (45 ml) sugar or honey, or to taste
  • 1 pinch ground cinnamon
  • 1 tsp (5 ml) rose water, or to taste
  • For a thicker, frostier lassi, use frozen peach slices instead of fresh ones. This creates a smoothie-like texture without watering it down with ice.
  • To make this recipe vegan, substitute the Greek yogurt with a thick, plain plant-based yogurt (like coconut or soy) and use maple syrup or agave instead of honey.
  • For a deeper flavor, you can grill or roast the peaches for a few minutes before blending to caramelize their natural sugars.

Method

  1. Wash the peaches thoroughly.
  2. Chop them into small chunks, making sure to discard the central pit.
  3. Place the peach chunks, coconut milk, Greek yogurt, sugar or honey, and cinnamon into a high-speed blender.
  4. Add the rose water carefully, starting with a small amount. All brands have different strengths, and a little goes a long way.
  5. Blend on high until the mixture is completely smooth and creamy.
  6. Taste and adjust sweetness or the amount of rose water if needed.
  7. Pour into 4 glasses and serve immediately.
  8. Garnish your lassi with a sprinkle of crushed pistachios, a pinch of saffron threads, or a few edible rose petals for a beautiful presentation.
