Ingredients

  • (Serves 4)
  • 1/2 cup (120 ml) fresh orange juice (from about 2 large oranges)
  • 2 cups (480 ml) buttermilk or plain low-fat yogurt
  • 2 tablespoons (30 ml / 1 fl oz) honey, or to taste
  • 1 cup (150 g / 5.3 oz) ice cubes
  • for the Perfect Lassi
  • For the best flavor and a boost of Vitamin C, use freshly squeezed orange juice rather than bottled.
  • For an extra creamy and rich lassi, substitute the low-fat yogurt with full-fat plain or Greek yogurt.
  • Make it vegan by swapping the yogurt for a plant-based alternative like coconut or soy yogurt and using maple syrup or agave instead of honey.

Method

  1. Combine all in a blender.
  2. Place the fresh orange juice, buttermilk or yogurt, honey, and ice cubes into a high-speed blender. 2.
  3. Blend until smooth. Secure the lid and blend on high for 30-60 seconds, or until the ice is completely crushed and the mixture is smooth and frothy. 3.
  4. Serve immediately.
  5. Pour the lassi into four tall glasses.
  6. Garnish with an orange slice or a sprig of mint if desired, and enjoy right away for the best texture.
  7. Add a pinch of ground cardamom or a splash of rose water to the blender for a more traditional, aromatic flavor.
