Ingredients

  • (Serves 6)
  • 1 Tbs. (15ml / 0.5 fl oz) olive oil
  • 1 cup (150g / 5.3 oz) chopped onion
  • 3 cloves garlic, minced (1 Tbs. or 15g / 0.53 oz)
  • 1 28-oz. (794g / 28 oz) can crushed tomatoes
  • 2 18.2-oz. (515g / 18.2 oz) cartons prepared lentil soup
  • 1 15-oz. (425g / 15 oz) can chickpeas, rinsed and drained
  • ½ cup (75g / 2.65 oz) raisins or dried currants
  • 2 tsp (10ml) ground cinnamon, or more to taste
  • 1½ tsp. (7.5ml / 0.3 fl oz) ground cumin
  • ¼ tsp (1.25ml / 0 fl oz) red pepper flakes, or to taste
  • Salt and black pepper, to taste (optional)
  • For a deeper, smokier flavor, add ½ teaspoon of smoked paprika along with the other spices. A squeeze of fresh lemon juice just before serving will also brighten up all the flavors.
  • This stew is fantastic for meal prep and tastes even better the next day. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave.
  • Feel free to bulk it up with more vegetables. Diced carrots, celery, or sweet potato can be added with the onion at the beginning of the cooking process; just sauté them for a few extra minutes until they begin to soften.

Method

  1. Heat the olive oil in a medium saucepan or Dutch oven over medium heat.
  2. Add the chopped onion and sauté for about 3 minutes, until it becomes soft and translucent.
  3. Stir in the minced garlic and cook for one more minute until fragrant, stirring constantly to prevent it from browning. 2.
  4. Pour in the crushed tomatoes, prepared lentil soup, chickpeas, and raisins.
  5. Sprinkle in the cinnamon, cumin, and red pepper flakes. Give everything a good stir to combine and season with salt and pepper, if you like.
  6. Bring the stew to a gentle simmer over medium-high heat. 3.
  7. Reduce the heat to medium-low and let the stew simmer, uncovered, for 20 minutes.
  8. Stir often, scraping the bottom of the pot to prevent sticking. The stew is ready when it has reduced slightly and the sauce has thickened into a rich, hearty consistency.
