Ingredients

  • 1 pound (450 g / 15.9 oz) small waxy potatoes, like new or fingerling, quartered
  • Salt to taste
  • 3 to 4 tablespoons (45-60 g / 2.12 oz) unsalted butter or 45-60ml extra virgin olive oil
  • 4 ounces (115 g / 4.1 oz) asparagus, green beans, or snow peas, finely chopped
  • 1 cup (150 g / 5.3 oz) fresh or frozen peas, thawed
  • 1/2 cup (15 g / 0.53 oz) mixed fresh herbs, like parsley, mint, and chives, chopped
  • Freshly ground black pepper to taste
  • 1 to 2 tablespoons (30 ml / 1 fl oz) all-purpose flour, if needed for binding
  • 4 to 6 burger buns, for serving
  • Toppings like blue cheese, ranch dressing, lettuce, or tomato
  • For a firmer patty that’s easier to flip, chill the shaped burgers in the refrigerator for at least 30 minutes before cooking.
  • To make this recipe vegan, simply use extra virgin olive oil instead of butter and serve with your favorite dairy-free toppings and buns.
  • The burger mixture can be prepared up to a day in advance. Cover and refrigerate, then bring to room temperature before shaping and cooking.
  • These patties are fantastic as bite-sized appetizers. Shape the mixture into small, two-bite rounds and serve with a dipping sauce at your next party.

Method

  1. Place the quartered potatoes in a large pot and cover with cold, salted water.
  2. Bring to a boil, then reduce the heat to a vigorous simmer.
  3. Cook for about 20 minutes, or until very tender.
  4. Drain thoroughly.
  5. While the potatoes cook, melt 1 tablespoon (15 ml / 0.5 fl oz) of butter or heat the oil in a large skillet over medium heat.
  6. Add the chopped asparagus and cook, stirring frequently, for 2-3 minutes until crisp-tender.
  7. Stir in the peas and fresh herbs, season with salt and pepper, and cook for another 1-2 minutes until everything is heated through.
  8. Transfer the vegetable mixture to a large mixing bowl.
  9. Add the drained, hot potatoes to the bowl with the vegetables. Roughly mash everything together with a potato masher or fork, leaving some texture.
  10. Taste and adjust the seasoning.
  11. Let the mixture cool for a few minutes. If it seems too wet to hold its shape, stir in a tablespoon or two of flour.
  12. Shape the mixture into 4 to 6 evenly sized patties. For best results, you can chill the patties for 30 minutes to help them firm up.
  13. Wipe out the skillet and add 2 tablespoons (30 ml / 1 fl oz) of the remaining butter or oil over medium heat.
  14. Once hot, carefully place the burgers in the pan.
  15. Cook for about 5 minutes per side, until golden brown and crisp.
  16. Add more butter or oil if the pan becomes dry.
  17. Serve immediately on buns with your favorite toppings, or on a plate with a side salad.
  18. Don't over-mash the potatoes! Leaving some larger chunks creates a more interesting and rustic texture in the final burger.
