Ingredients

  • 1.5 kg (3.31 lb) (3.3 lbs) Conference pears, about 8, peeled, cored, and chopped
  • 1 lemon, juiced
  • 250 g (8.8 oz) / 1 1/4 cups white caster sugar
  • Experiment with other fruits like apples, strawberries, or rhubarb. You may need to adjust the sugar and cooking time.
  • For a stovetop version, simmer all in a pan for about 30 minutes, mashing the fruit halfway through, until it reaches a jam consistency.
  • Control the texture by using a potato masher for a chunkier jam or blending longer for a smoother finish.

Method

  1. Place the chopped pears and lemon juice into a large, microwave-safe bowl.
  2. Cover loosely with a plate or microwave-safe lid.
  3. Microwave on full power (based on 800W) for 10 minutes, stopping to stir after 5 minutes.
  4. Carefully remove the bowl from the microwave.
  5. Add the sugar and use a hand blender to pulse the mixture a few times. Aim for a chunky texture rather than a perfect purée.
  6. Return the bowl to the microwave, uncovered, and cook for a final 15–20 minutes.
  7. Stir every 5 minutes to prevent sticking.
  8. The jam is ready when most of the water has evaporated. Test the set by placing a small spoonful onto a chilled plate; if it holds its shape and wrinkles when pushed, it's done.
  9. Allow the jam to cool completely before potting into sterilised jars. It will keep for up to a month in the fridge.
  10. Keep a small plate in the freezer to test for set. A dollop of ready jam will wrinkle when pushed.
