Ingredients

  • 3/4 cup (255 g / 9 oz) honey
  • 1/2 cup (110 g / 3.9 oz) packed brown sugar
  • 1/4 cup (60 ml) neutral oil, like grapeseed or corn
  • 3 cups (300 g / 10.6 oz) Crunchy Granola (your favorite homemade or store-bought)
  • Pro-Tips & Variations
  • For a protein-packed power bar, substitute the brown sugar with an equal amount of peanut butter or your favorite nut butter. Melt it with the honey and oil.
  • To make fruit-sweetened bars, replace the honey and brown sugar with 1 1/2 cups (480 ml) of pureed dried fruit (like dates or figs). Process the fruit with the oil in a food processor until smooth, then mix with the granola.
  • Create a decadent dessert bar by adding 1 cup (240 ml) of dried cherries to the granola. After pressing the mixture into the pan, drizzle 1/2 cup (480 ml) of melted semisweet chocolate over the top before chilling.
  • For perfectly clean cuts, ensure the bars are thoroughly chilled and firm. Run a large, sharp knife under hot water and wipe it dry before each slice.

Method

  1. In a small pot, combine the honey, brown sugar, and oil.
  2. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Place the granola in a large, heatproof bowl. Carefully pour the hot sugar mixture over the granola.
  4. Stir immediately with a spatula until the granola is completely and evenly coated.
  5. Press the mixture firmly and evenly into an 8 or 9-inch square pan. For best results, use the bottom of a glass or measuring cup to compact it tightly.
  6. Let the pan cool completely in the refrigerator until firm, at least 30 minutes.
  7. Cut into squares or rectangles and serve. Store in an airtight container for up to 4 days.
