Ingredients

  • 2 cups (400 g / 14.1 oz) Granulated Sugar
  • 2 cups (473 ml) Water
  • To create flavored syrups, add like cinnamon sticks, citrus zest, vanilla beans, or fresh mint to the hot syrup. Let them steep for 10-15 minutes before straining.
  • The magic ratio is always 1:1 (equal parts sugar and water). You can easily scale this recipe up or down depending on your needs.
  • For a richer, sweeter syrup (often used in cocktails), try a 2:1 ratio of sugar to water. This version is more viscous and will last even longer.
  • Beyond drinks, use simple syrup to keep cakes moist (as a cake soak), macerate fresh fruit to draw out juices, or as a base for homemade sorbets and granitas.

Method

  1. In a small saucepan, combine the sugar and water. 2.
  2. Place the saucepan over medium heat.
  3. Bring the mixture to a gentle boil, stirring occasionally, until the sugar has completely dissolved. This should only take a few minutes. 3.
  4. Remove the pot from the heat and let the syrup cool completely to room temperature. 4.
  5. Transfer the cooled simple syrup to a clean, airtight jar or bottle. Store it in the refrigerator for up to 6 months.
