Ingredients

  • Daikon & Carrot Slaw
  • One 4-inch / 10-cm length daikon radish, peeled
  • 2 large carrots
  • 2 teaspoons (10 ml / 0.3 fl oz) finely grated fresh ginger
  • 4 tablespoons (60 ml / 2 fl oz) Sushi Rice Dressing
  • Pomegranate Slaw Variation
  • ½ cup (85 g) (3 oz) pomegranate seeds
  • ½ teaspoon finely chopped fresh jalapeño pepper
  • For the most uniform shreds, use a mandoline slicer with a julienne blade. This creates a professional-looking slaw with a perfect texture.
  • The slaw's flavor deepens as it marinates. For the best taste, let it chill for at least 2-3 hours, or even overnight.
  • If you don't have a pre-made Sushi Rice Dressing, whisk together 3 tablespoons (45 ml / 1.5 fl oz) rice vinegar, 1 tablespoon (15 ml / 0.5 fl oz) soy sauce, 1 teaspoon (5 ml / 0.2 fl oz) sesame oil, and 1 teaspoon (5 ml / 0.2 fl oz) sugar.

Method

  1. Shred the daikon radish and carrots using a box grater, mandoline, or the shredding disc of a food processor.
  2. In a medium bowl, toss the shredded daikon and carrot together with the finely grated fresh ginger.
  3. Pour the Sushi Rice Dressing over the mixture and stir well to ensure everything is evenly coated.
  4. Cover the bowl and chill in the refrigerator for at least 1 hour to allow the flavors to meld together.
  5. Serve cold and enjoy the crisp, refreshing taste.
