Ingredients

  • 1.5 to 2 pounds / 680 to 907g (32 oz) firm or extra-firm tofu, patted dry and cut into 1/2-inch cubes
  • 1 to 2 tablespoons / 15 to 30ml (1 fl oz) neutral oil, like grapeseed or corn
  • Salt and freshly ground black pepper, to taste
  • For the crispiest results, press your tofu for at least 30 minutes before cubing. This removes excess water and allows the tofu to bake up firm and crunchy.
  • Give them space! Spreading the tofu cubes in a single layer without overcrowding the pan allows hot air to circulate, ensuring each piece gets golden and crisp on all sides.
  • For an even faster method, use an air fryer. Cook at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through, until golden and crisp.
  • To restore crispness after refrigeration, simply toast the croutons in a dry skillet, oven, or air fryer for 3-5 minutes until warmed through and crunchy again.

Method

  1. Preheat your oven to 350°F / 175°C. For easy cleanup, line a large baking sheet with parchment paper. 2.
  2. Place the tofu cubes on the prepared baking sheet.
  3. Drizzle with oil, season with salt and pepper, and toss gently to ensure every cube is lightly coated. 3.
  4. Spread the tofu in a single, even layer, making sure the pieces aren't touching. This is key for maximum crispiness! 4.
  5. Bake for 50 to 60 minutes, without tossing, until the croutons have shrunk significantly and are a deep golden brown. They should be firm and crisp to the touch. 5.
  6. Let the croutons cool on the baking sheet for a few minutes; they will crisp up even more as they cool and will be easier to remove from the pan.
  7. Serve immediately or store for later.
  8. Don't be afraid to season!
  9. Before baking, toss the oiled tofu with garlic powder, onion powder, smoked paprika, nutritional yeast for a cheesy flavor, or your favorite dried herbs.
