  • for the Perfect Spelt Salad
  • Whole grains like spelt can spoil faster than refined grains. Store uncooked spelt in an airtight container in the refrigerator or freezer to maintain freshness, especially if you won't use it within a few months.
  • To make this salad vegan, simply use your favorite plant-based mayonnaise. The result is just as creamy and delicious!
  • Feel free to customize! Add a can of rinsed chickpeas for extra protein, toss in some fresh herbs like dill or parsley, or add a handful of toasted sunflower seeds for extra crunch just before serving.
  • This salad is a meal prep dream! Cook the spelt and chop the vegetables ahead of time, storing them in separate airtight containers in the fridge for up to 3 days. Mix with the dressing when you're ready to chill and serve.

Method

  1. In a medium saucepan, combine the spelt with enough water to cover by at least 2 inches.
  2. Bring the water to a rolling boil, then reduce the heat to a gentle simmer.
  3. Cover the pot and cook for about 1 hour, or until the spelt is tender but still has a pleasant chew.
  4. Drain the cooked spelt thoroughly in a fine-mesh sieve and transfer it to a large mixing bowl.
  5. Add the chopped red bell pepper, cucumber, shredded carrot, and sliced green onions to the bowl with the spelt and stir to combine.
  6. In a separate small bowl, whisk together the mayonnaise, fresh lemon juice, salt, and cayenne pepper until smooth and creamy.
  7. Pour the dressing over the spelt and vegetable mixture.
  8. Toss gently until everything is evenly coated.
  9. Cover the bowl and chill in the refrigerator for at least 1 hour, or up to 24 hours, to allow the flavors to meld together before serving.
