Ingredients

  • 2 15-ounce / 425g (15 oz) cans white navy beans, drained and rinsed
  • 1/4 cup (60 g / 2.12 oz) sour cream
  • 1 tablespoon (15 ml / 0.5 fl oz) orange juice concentrate
  • 1 teaspoon (5 g / 0.18 oz) chipotle purée
  • 1 teaspoon (5 ml / 0.2 fl oz) fresh lime juice
  • 1 tablespoon (6 g / 0.21 oz) grated orange zest
  • 1/2 teaspoon (3 g / 0.11 oz) salt, or to taste
  • 1/2 cup (75 g / 2.65 oz) finely diced white onion
  • 1 tablespoon (4 g / 0.14 oz) chopped fresh cilantro
  • Pro-Tips
  • For a spicier kick, add an extra 1/2 teaspoon (10 ml / 0.3 fl oz) of chipotle purée. For a milder dip, use 1/4 teaspoon (20 ml / 0.7 fl oz) of smoked paprika instead.
  • The dip's flavors meld and deepen overnight. Make it a day ahead, store it in an airtight container in the fridge, and give it a good stir before serving.
  • For a completely smooth texture, you can add the onion and cilantro to the food processor and pulse a few times until just incorporated, rather than folding them in by hand.

Method

  1. In the bowl of a food processor, combine the drained and rinsed navy beans, sour cream, orange juice concentrate, chipotle purée, fresh lime juice, orange zest, and salt.
  2. Secure the lid and process on high until the mixture is completely smooth and creamy, scraping down the sides of the bowl as needed to ensure everything is incorporated.
  3. Transfer the smooth purée to a serving bowl. Gently fold in the finely diced white onion and chopped cilantro with a rubber spatula until just combined.
  4. Serve immediately or cover and refrigerate for up to 24 hours.
  5. Stir well before serving.
