Ingredients

  • (Makes 1½ cups)
  • ½ pound (227 g / 8 oz) firm or soft tofu, patted dry
  • 2 tablespoons (30 ml / 1 fl oz) fresh lemon juice
  • ¼ cup (60 ml / 2 fl oz) olive oil
  • 2-4 tablespoons (30-60 ml / 2 fl oz) water, use less for a dip/spread
  • 1 tablespoon (15 ml / 0.5 fl oz) tamari or soy sauce
  • 2 to 3 cloves garlic, chopped
  • For an ultra-silky texture, use silken tofu. For a thicker, heartier dip reminiscent of hummus, use firm or extra-firm tofu.
  • Boost the flavor by adding fresh herbs like dill or chives, a pinch of smoked paprika, or a tablespoon of nutritional yeast for a cheesy, umami kick.
  • For the thickest possible spread, press your firm tofu for at least 20 minutes before blending to remove as much excess water as possible.

Method

  1. Combine all —tofu, lemon juice, olive oil, water, tamari, and garlic—in a high-speed blender or food processor.
  2. Blend on high until the mixture is completely smooth and creamy. You may need to pause and scrape down the sides of the container a few times to ensure everything is fully incorporated.
  3. Check the consistency. If making a dressing and it's too thick, add more water, one tablespoon at a time, until it reaches your desired thinness.
  4. Taste and adjust seasoning if needed.
  5. Transfer to an airtight container and store in the refrigerator for up to 4 days.
