Ingredients

  • (Yields 4 Parfaits)
  • 3 cups (710 ml) plain nonfat Greek yogurt or strained plain soy yogurt
  • 1 Tbsp (15 ml) pure maple syrup
  • ½ tsp (2.5 ml / 0.1 fl oz) pure vanilla extract
  • ½ cup (120 ml / 4.1 fl oz) walnuts, chopped
  • 2 Tbsp (30 ml) wheat germ
  • 2 Tbsp (30 ml) cracked flaxseed
  • 1 red grapefruit, peeled and segmented
  • 1 minneola tangelo, peeled and segmented
  • 1 cup (240 ml) fresh blueberries
  • Pro-Tips
  • For a grab-and-go breakfast, assemble these parfaits in mason jars or portable containers with tight-fitting lids.
  • To keep the crunchy layer from getting soggy, pack the walnut, wheat germ, and flaxseed mix in a separate small container and sprinkle it on just before eating.
  • Feel free to customize! Swap the citrus for seasonal fruits like peaches or berries, or use pecans or almonds instead of walnuts.
  • To make this recipe fully vegan, ensure you use a plant-based yogurt like soy or coconut and a vegan-friendly sweetener like maple syrup.

Method

  1. (Prep: 15 minutes)
  2. In a small bowl, stir together the yogurt, maple syrup, and vanilla extract until smooth and well combined.
  3. Prepare your layers. In four parfait glasses or jars, begin by spooning a layer of the yogurt mixture into the bottom of each glass.
  4. Add a sprinkle of the chopped walnuts, wheat germ, and cracked flaxseed over the yogurt.
  5. Arrange a layer of the grapefruit segments, minneola segments, and fresh blueberries on top of the crunchy mix.
  6. Repeat the layering process—yogurt, crunch, fruit—until all are used, finishing with a final layer of fruit and a sprinkle of the walnut mix on top.
