Ingredients

  • 2 tsp or 10 ml olive oil
  • 1 medium leek, white and pale green parts, about 1 cup or 90g (3.17 oz), halved and sliced
  • ½ cup or 75g (2.65 oz) diced red bell pepper
  • ½ cup or 75g (2.65 oz) diced green bell pepper
  • 1½ cups or 255g (9 oz) quinoa, rinsed and drained
  • 2 cloves garlic, about 2 tsp or 6g (0.21 oz), minced
  • 2 large eggs
  • 1 cup or 240ml nonfat milk
  • 1½ cups or 4 oz / 113g grated Cheddar cheese, plus more for sprinkling
  • Feel free to mix up the cheese. A blend of Monterey Jack and cheddar adds extra meltiness, while a pinch of Gruyère can add a sophisticated, nutty flavor.
  • This casserole is perfect for meal prep. Assemble it completely (without baking), cover tightly, and refrigerate for up to 2 days. When ready to eat, bake as directed, adding 5-10 minutes to the cooking time.

Method

  1. Sauté the aromatics: In a medium saucepan, warm the olive oil over medium heat.
  2. Add the sliced leek and diced bell peppers.
  3. Cover and cook for 5 minutes, until tender.
  4. Toast the quinoa: Stir in the rinsed quinoa and minced garlic.
  5. Cook, uncovered, for 3-4 minutes, stirring frequently, until the quinoa is lightly toasted and fragrant.
  6. Cook the quinoa: Pour in 3 cups (720 ml) of water and season with salt.
  7. Bring to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes, or until the water is absorbed.
  8. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  9. Prepare for baking: Preheat your oven to 350°F (175°C).
  10. Coat a 13x9-inch baking dish with cooking spray.
  11. Mix the casserole: In a large bowl, whisk the eggs and milk.
  12. Fold in the cooked quinoa mixture and 1½ cups of grated Cheddar cheese until everything is evenly combined.
  13. Bake to perfection: Transfer the mixture to the prepared baking dish.
  14. Sprinkle with additional cheese, if using.
  15. Bake for 30-35 minutes, until the edges are browned and the center is set.
  16. Let it rest for a few minutes before serving.
  17. Don't skip rinsing the quinoa! This crucial step removes its natural coating, called saponin, which can cause a bitter or soapy taste.
