Ingredients

  • 1 cup (185 g / 6.5 oz) quick-cooking brown rice, or 3 cups cooked brown rice
  • 1 16-ounce / 450g (15.9 oz) can black beans, rinsed and drained
  • 1 16-ounce / 450g (15.9 oz) can corn kernels, drained
  • 1 6-ounce / 170g (6 oz) jar roasted red bell peppers, drained and chopped
  • 2 scallions, minced
  • 2 tablespoons (30 ml / 1 fl oz) freshly squeezed lime juice
  • ¼ teaspoon (1 g / 0.04 oz) chili powder
  • ½ teaspoon (3 g / 0.11 oz) salt, or to taste
  • ¼ cup (60 ml / 2 fl oz) extra-virgin olive oil
  • 2 tablespoons (8 g / 0.28 oz) minced fresh parsley or cilantro
  • for the Perfect Salad
  • For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. This gives the time to marinate in the zesty lime dressing.
  • For a spicier kick, add a pinch of cayenne pepper to the dressing or fold in some finely minced jalapeño with the other vegetables.

Method

  1. If using uncooked rice, prepare it according to the package directions. Allow it to cool slightly once cooked.
  2. In a large bowl, combine the cooked rice, rinsed black beans, drained corn, chopped roasted red peppers, and minced scallions.
  3. In a separate small bowl or jar, prepare the dressing.
  4. Whisk together the fresh lime juice, chili powder, and salt. Slowly drizzle in the extra-virgin olive oil while whisking continuously to emulsify.
  5. Pour the dressing over the rice and vegetable mixture.
  6. Add the fresh parsley or cilantro and toss gently until everything is well-coated.
  7. Taste and adjust seasonings if necessary.
  8. Serve immediately or chill for at least 30 minutes to allow the flavors to meld.
  9. Add a creamy element by dicing half an avocado and gently folding it in just before serving. Cherry tomatoes or a finely diced red onion also make great additions.
  10. Turn this salad into a complete meal by serving it over a bed of fresh spinach or romaine lettuce, or use it as a filling for hearty vegetarian wraps.
