Ingredients

  • (Serves 4)
  • ¾ lb or 340g (12 oz) fresh okra
  • 3 tbsp or 45ml olive or peanut oil, divided
  • 2 tbsp or 15g (0.53 oz) chickpea flour (besan)
  • 1½ cups or 360g (12.7 oz) plain yogurt
  • ½ cup plus 2 tbsp or 150ml water, divided
  • ¼ tsp urad dal (split black gram)
  • ¼ tsp chana dal (split chickpeas)
  • ¼ tsp whole brown mustard seeds
  • 2 dried hot red chilies
  • 2 tbsp or 20g (0.71 oz) onion, finely chopped
  • 1 fresh hot green chili, split lengthwise
  • ¼ tsp ground turmeric
  • Salt to taste
  • Pro-Tips for the Perfect Curry
  • Ensure okra is completely dry before chopping to minimize any sliminess.
  • If the curry thickens too much upon standing, simply stir in a splash of warm water before serving to reach your desired consistency.
  • For the tadka, if you don't have chana dal, you can simply double the amount of urad dal.

Method

  1. Prep the Okra: Gently wipe the okra pods with a damp cloth and let them air-dry completely. Trim the tops and tails, then slice the pods crosswise into 1-inch pieces.
  2. Fry the Okra: Heat 2 tablespoons (30 ml / 1 fl oz) of oil in a medium frying pan over medium-high heat.
  3. Add the okra and fry for 5-6 minutes, stirring occasionally, until it begins to brown.
  4. Reduce the heat to medium and continue frying for another 3-4 minutes until tender. Use a slotted spoon to transfer the okra to a paper towel-lined plate and sprinkle with a pinch of salt.
  5. Prepare the Yogurt Base: In a mixing bowl, combine the chickpea flour with 2 tablespoons (30 ml / 1 fl oz) of water and mix until you have a smooth, lump-free paste.
  6. Whisk in the plain yogurt and the remaining ½ cup of water until fully combined.
  7. Make the Tadka (Tempering): In the same pan, heat the remaining 1 tablespoon (15 ml / 0.5 fl oz) of oil over medium heat.
  8. Add the urad dal and chana dal.
  9. Once they turn a light golden color, add the mustard seeds and dried red chilies.
  10. When the mustard seeds begin to pop (this will only take a few seconds), add the chopped onion, green chili, and turmeric.
  11. Sauté for one minute until the onion softens.
  12. Finish the Curry: Lower the heat and slowly pour the yogurt mixture into the pan, stirring continuously to prevent curdling.
  13. Continue to stir gently as you bring the curry to a simmer. The mixture will begin to thicken.
  14. Stir in the fried okra and ½ teaspoon of salt.
  15. Let it simmer gently for 2-3 more minutes for the flavors to meld.
  16. Serve hot.
  17. Whisk the yogurt mixture continuously on low heat when adding it to the pan to prevent it from splitting or curdling.
