Ingredients

  • 2 cups (40 g / 1.41 oz) loosely packed fresh cilantro leaves
  • 1 clove garlic
  • 3 tbsp (45 ml) peanut or neutral oil, like grapeseed or corn
  • 1 tbsp (15 ml) freshly squeezed lime juice
  • Pinch of salt, to taste
  • Water, as needed to thin
  • Pro-Tips for the Best Cilantro Sauce
  • For a spicy kick, add 1 tablespoon (15 ml / 0.5 fl oz) of chopped ginger, an extra clove of garlic, and a seeded jalapeño or a pinch of red pepper flakes to the food processor.
  • Experiment with other fresh herbs! This recipe works wonderfully with parsley, basil, dill, mint, or any combination you love.
  • To keep the sauce's color brilliantly green during storage, press a piece of plastic wrap directly onto the surface before sealing the container. This minimizes oxidation and browning.

Method

  1. Combine the cilantro, a pinch of salt, the garlic, and the oil in a food processor or high-speed blender. 2. Process the mixture until it's well combined, stopping to scrape down the sides of the container as necessary to ensure everything is incorporated. 3.
  2. Add the freshly squeezed lime juice and blend for just another second to combine. 4.
  3. Check the consistency. If you prefer a thinner sauce, add a little water, one teaspoon at a time, and pulse until you reach your desired texture. 5.
  4. Taste and adjust the seasoning with more salt or lime juice if needed.
  5. Serve immediately or transfer to an airtight container and refrigerate for up to 3 days.
  6. Don't discard the tender upper stems of the cilantro! They are packed with flavor and blend beautifully into the sauce, adding more depth than just the leaves alone.
