Ingredients

  • 1 cup (250 ml) mayonnaise (use a vegan brand to keep it plant-based)
  • 1 teaspoon (5 ml / 0.2 fl oz) minced garlic
  • 3 teaspoons (15 ml / 0.5 fl oz) Madras curry powder
  • ½ teaspoon garlic chili paste
  • ¼ teaspoon cayenne pepper
  • Pinch of salt, or more, to taste
  • For the best flavor, let the mayonnaise rest in the refrigerator for at least an hour, or even overnight. The spices will fully bloom and infuse the base.
  • Gently toast the curry powder in a dry skillet over low heat for 30-60 seconds until fragrant. Let it cool completely before mixing it into the mayonnaise for a deeper, more complex flavor.
  • A squeeze of fresh lime or lemon juice at the end will brighten the entire sauce and add a lovely layer of acidity to cut through the richness.

Method

  1. In a small non-metal bowl, combine the mayonnaise, minced garlic, Madras curry powder, garlic chili paste, cayenne pepper, and a pinch of salt.
  2. Stir everything together with a spoon or small whisk until the mixture is smooth and the color is uniform.
  3. Cover the bowl and refrigerate for at least 10 minutes before using. This allows the flavors to meld and deepen.
  4. Adjust the spice level to your preference. Omit the cayenne for a milder version, or add an extra dash of garlic chili paste for a fiery kick.
