Ingredients

  • 1 tablespoon (15 ml / 0.5 fl oz) extra-virgin olive oil
  • 1 (8-ounce / 227g / 8 oz) package vegetarian sausage links, cut into 1-inch pieces
  • 1 cup (150 g / 5.3 oz) chopped onions
  • 1 cup (128 g / 4.5 oz) sliced baby carrots
  • 2 cloves garlic, minced
  • 2 (16-ounce / 454g / 16 oz) cans cannellini beans, drained and rinsed
  • 1 (28-ounce / 794g / 28 oz) can diced tomatoes, drained
  • 1 cup (240 ml) vegetable broth
  • 1 teaspoon (5 g / 0.18 oz) dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1 cup (120 g / 4.2 oz) dry bread crumbs
  • For an extra crispy and flavorful topping, use panko bread crumbs and toss them with a tablespoon of olive oil and some dried herbs before toasting.
  • The type of vegetarian sausage you choose will greatly impact the final flavor. Try a spicy Italian-style for a bit of heat or an apple-sage sausage for a sweeter, more autumnal feel.
  • If you have fresh thyme on hand, use 1 tablespoon (15 ml / 0.5 fl oz) of fresh leaves instead of 1 teaspoon of dried for a brighter, more aromatic flavor.

Method

  1. Heat the oil in a large skillet or Dutch oven over medium heat.
  2. Add the vegetarian sausage pieces and cook until nicely browned on all sides, about 5 minutes. Use a slotted spoon to remove the sausage and set it aside.
  3. In the same skillet, add the chopped onions, sliced carrots, and minced garlic.
  4. Cover the skillet and cook, stirring occasionally, until the vegetables have softened, about 5 minutes.
  5. Stir in the drained cannellini beans, drained diced tomatoes, vegetable broth, and dried thyme.
  6. Season generously with salt and freshly ground black pepper to your taste.
  7. Bring the mixture to a simmer, then reduce the heat, cover, and let it cook until the vegetables are tender and the flavors have melded, about 20 minutes.
  8. While the cassoulet simmers, toast the bread crumbs.
  9. Place them in a separate small, dry skillet over medium-high heat.
  10. Stir constantly until they are golden brown and fragrant. Watch them carefully to prevent burning, then set aside.
  11. Stir the reserved browned sausage back into the bean and vegetable mixture and heat through.
  12. To serve, ladle the hot cassoulet into bowls and sprinkle generously with the toasted bread crumbs for a delightful crunch.
  13. Don't be afraid to add more vegetables.
  14. Diced celery, mushrooms, or a handful of fresh spinach stirred in at the end would be delicious additions.
