Ingredients

  • 1 tablespoon (15 ml / 0.5 fl oz) extra-virgin olive oil
  • ¼ cup (40 g / 1.41 oz) chopped onion
  • 1 12-ounce / 340g (12 oz) package frozen vegetarian burger crumbles
  • 1 4-ounce / 113g (4 oz) can diced mild green chiles, drained
  • ¾ cup (180 g / 6.3 oz) tomato ketchup
  • 3 tablespoons (45 g / 1.59 oz) yellow mustard
  • 2 tablespoons (30 g / 1.06 oz) sweet pickle relish
  • Salt and freshly ground black pepper, to taste
  • 4 sandwich buns, toasted if desired
  • Toast Your Buns: Lightly toast the inside of your sandwich buns before serving. This creates a slight barrier that helps prevent them from becoming soggy from the saucy filling.
  • Boost The Veggies: Sauté finely diced bell peppers, mushrooms, or shredded carrots along with the onion for extra flavor, texture, and nutrients.
  • Customize The Sauce: For a deeper, smokier flavor, add a teaspoon of smoked paprika or a splash of vegan Worcestershire sauce. For a little heat, add a dash of your favorite hot sauce.

Method

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the chopped onion, cover the skillet, and cook for about 5 minutes, or until the onion has softened and become translucent.
  3. Stir in the frozen veggie burger crumbles and the drained diced green chiles, breaking up any large clumps with a spoon.
  4. Pour in the ketchup, yellow mustard, and sweet pickle relish.
  5. Stir everything together until well combined.
  6. Season generously with salt and freshly ground black pepper to your liking.
  7. Bring the mixture to a gentle simmer and cook, stirring occasionally, for about 10 minutes to allow the flavors to meld and the mixture to heat through completely.
  8. To serve, spoon the hot sloppy joe mixture generously onto each sandwich bun and serve immediately.
