    Barley Pilaf

    Barley flakes have a consistency reminiscent of rolled oats, and have a nutty flavor. Barley also happens to be high in fiber, so eating it often helps promote colon health.

    Serves 4

    Ingredients

    • 3 tablespoons olive oil
    • 1 onion, diced
    • 4 cloves garlic, minced
    • 1 red bell pepper, cut into strips lengthwise
    • 8 ounces mushrooms, sliced
    • 2 cups cooked barley flakes
    • 1⁄2 cup vegetable broth or water
    • Salt and freshly ground black pepper to taste
    • 1⁄2 to 3⁄4 cup crumbled feta cheese for garnish
    • 1⁄2 cup dried cranberries for garnish

    1. Heat the oil in a large skillet over medium heat and sauté the onion until golden, about 5 minutes.
    2. Add the garlic, pepper, mushrooms, and barley and sauté for about 5 minutes.
    3. Add the vegetable broth, salt, and pepper. When the liquid is absorbed, remove from the heat and garnish with the feta cheese and cranberries. Serve hot.
