    Cream cheese and cucumber sandwiches

    • slender sourdough bread, or pressed pumpernickel bread
    • cream cheese
    • cucumber
    • salt to taste
    • paprika to taste

    1. Cut thin slices from a sourdough baguette, or cut slices of square pressed pumpernickel into quarters.
    2. Spread each slice rather thickly with cream cheese. Score a large, firm cucumber with a fork to give it a pretty pattern and slice it about ⅛ to ¼ inch thick.
    3. Put a slice of cucumber in the center of each sandwich and salt it very lightly, then delicately sprinkle some paprika down the center of the sandwich so as to make a bright red line straight across it.
