    Cottage cheese and green onion sandwiches

    • slender sourdough or French bread, or pressed pumpernickel bread
    • butter
    • small-curd cottage cheese
    • chopped green onions
    • salt and pepper to taste

    1. Cut thin slices from a sourdough baguette, or cut slices of square, pressed pumpernickel into quarters.
    2. Butter the bread, and put a heaping tablespoon of small-curd cottage cheese on each slice.
    3. Shape the cottage cheese evenly over the entire slice, then sprinkle about 1 tablespoon of chopped green onions over it and press the onions in very slightly so that they do not fall off quite so easily.
    4. Salt the sandwiches lightly and grind a little black pepper on them if you wish.
