Lemon Glaze

Makes 1 2/3 cups (420 mL)

This glaze or thin icing is a lovely blend of sweet and sour. Use it on Apple Spice Cake.

1/4 cup (60 mL) Earth Balance spread or other vegan margarine
2 cups (500 mL) icing sugar
2 tablespoons (30 mL) grated or minced lemon peel
1 1/2 tablespoons (22 mL) freshly squeezed lemon juice
Put the Earth Balance spread in a bowl and cream well using a hand mixer or spoon. Add the icing sugar and mix until most of the sugar is incorporated, pressing out any lumps. Add the lemon peel and lemon juice and mix well.
