Zucchini and Fresh Basil Pomodoro
Per 1 cup
2 zucchini, sliced
4 cloves garlic, minced
2 tablespoons olive oil
4 large tomatoes, diced
1⁄3 cup chopped fresh basil
2 cups prepared angel hair pasta
Salt and pepper to taste
Heat zucchini and garlic over low heat in olive oil for 1–2 minutes, or until zucchini is just lightly softened. Add tomatoes and cook for another 4–5 minutes.
Toss zucchini and tomatoes with basil and pasta and season with salt and pepper, to taste.
