Noodles with Spinach
Per 1 cup
11⁄2 cups egg noodles
2 cloves garlic
1 tablespoon olive oil
1 cup thawed frozen spinach
2 tablespoons grated Parmesan cheese
1⁄4 teaspoon sea salt
Cook the noodles according to the package instructions. Drain thoroughly.
Smash, peel, and chop the garlic cloves. Slice the tomato.
Heat the oil in a frying pan over medium heat. Add the garlic and tomato. Cook briefly, turn the heat up to high, and add the noodles.
Stir in the spinach. Cook very briefly, mixing the spinach with the noodles, and remove from the heat. Stir in the Parmesan cheese. Season with salt as desired.
