4 cups vegetable broth

11⁄2 cups quinoa

1 cup frozen mixed veggies, thawed

1⁄4 cup lemon juice

1⁄4 cup olive oil

1 teaspoon garlic powder

1⁄2 teaspoon sea salt

1⁄4 teaspoon black pepper

2 tablespoons chopped fresh parsley

In a large pot, bring vegetable broth to a boil. Add quinoa, cover, and simmer for 15–20 minutes, stirring occasionally, until liquid is absorbed and quinoa is cooked. Add mixed veggies and stir to combine.
Remove from heat and combine with remaining ingredients. Serve hot or cold.
