Lemon Cilantro Couscous
Per 1⁄2 cup
2 cups vegetable broth
1 cup couscous
1⁄3 cup lemon juice
1⁄2 cup chopped fresh cilantro
1⁄4 teaspoon sea salt, or to taste
Bring vegetable broth to a simmer and add couscous. Cover and let stand for 10 minutes, until soft, then fluff with a fork.
Stir in lemon juice and cilantro, and season generously with sea salt.
