Simple Stuffed Pita Sandwich
Per 1⁄2 pita
1⁄2 small firm, crisp, hardy apple
1⁄2 celery stalk
1 leaf romaine lettuce
2 Cheddar cheese slices
3 teaspoons low-calorie Caesar dressing
1 tablespoon chopped walnuts
1 pita pocket
Wash and dry the apple, celery, and lettuce. Cut the celery into thin slices. Core the apple and chop finely. Shred the lettuce. Cut the cheese first horizontally and then vertically into tiny pieces.
Mix together the apple, celery, lettuce, cheese, salad dressing, and chopped walnuts. Refrigerate in a sealed container for at least 2 hours to give the flavors a chance to combine.
Cut the pita in half. Stuff half the filling into each pita half.
