Per 3⁄4 cup
8 ounces (1⁄2 box) fettuccine
1⁄2 cup butter
2 cloves garlic, minced
1 tablespoon flour
11⁄2 cups whole milk
2 tablespoons cream cheese
1 cup grated Parmesan cheese, plus extra for garnish
Salt and freshly ground black pepper
Prepare the pasta according to package directions. Drain and keep warm.
In a large saucepan, melt the butter; add garlic and cook 2 minutes.
Stir in the flour, then add the milk all at once, cooking and stirring over medium heat until thick and bubbly. Add the cream cheese; stir until blended. Add the Parmesan cheese; continue cooking until all cheese has melted. Toss with fettuccine; season with salt and pepper. Serve with extra Parmesan on the side.
