1 cup cottage cheese

1⁄2 cup ricotta

2 tablespoons sugar

1 large egg yolk

4 small whole grain tortillas

2 tablespoons unsalted butter, melted

4 tablespoons jam

Preheat oven to 325°F. In a food processor, pulse the cottage cheese, ricotta, and sugar until smooth. Transfer to a bowl; whisk in the yolk.
Butter a 9″ × 13″ baking dish. On a clean work surface, spoon a generous tablespoon of cheese filling onto the bottom third of a tortilla. Fold in the sides, and fold the bottom up to envelop the filling; roll the tortilla away from yourself. Repeat with remaining tortillas; line them into the baking dish and brush them with the melted butter. Bake 10–15 minutes, until they have become visibly plump. Serve with jam on the side.
