Easy Garlic Quinoa
Per 3⁄4 cup
1 yellow onion, diced
4 cloves garlic, minced
2 tablespoons olive oil
3 cups vegetable broth
11⁄2 cups quinoa
1⁄2 teaspoon salt
3 tablespoons nutritional yeast
In a large skillet, heat onion and garlic in oil or margarine for 3–4 minutes until onions are soft.
Add vegetable broth and quinoa, cover, and bring to a simmer. Allow to cook for 15 minutes until liquid is absorbed.
Fluff quinoa with a fork and stir in salt and nutritional yeast.
