Easy Banana Date Cookies
Per 1 cookie
1 cup chopped pitted dates
1 banana (medium ripe)
1⁄4 teaspoon vanilla
13⁄4 cups coconut flakes
Preheat oven to 375°F. Cover dates in water and soak for about 10 minutes until softened. Drain.
Process together the dates, banana, and vanilla in a food processor until almost smooth. Stir in coconut flakes by hand until thick. You may need a little more or less than 13⁄4 cups.
Drop by generous tablespoonfuls onto a cookie sheet. Bake 10–12 minutes, or until done. Cookies will be soft and chewy.
