Grilled Marinated Portobello Mushrooms
Per 1 mushroom
4 large portobello (4–6 inches in diameter) mushrooms, stems removed
1 cup extra-virgin olive oil
1 cup red wine vinegar
2 tablespoons soy sauce
1 tablespoon sugar
1⁄2 cup chopped fresh chives
Brush any dirt from the mushrooms, but do not wash them under water. Whisk together the olive oil, vinegar, soy sauce, sugar, and chives. In a shallow dish, pour the marinade over the mushrooms; marinate 10 minutes, turning occasionally.
Grill 2–3 minutes on each side. Serve whole or sliced. Sauce with leftover marinade, or save the marinade for another batch.
