Cocoa-Nut-Coconut No-Bake Cookies
Makes 24 cookies
Per 1 cookie
1⁄4 cup vegan margarine
1⁄2 cup soy milk
2 cups sugar
1⁄3 cup cocoa
1⁄2 cup natural peanut butter
1⁄2 teaspoon vanilla
3 cups quick-cooking oats
1⁄2 cup walnuts, finely chopped
1⁄2 cup coconut flakes
Line a baking sheet with wax paper.
Melt the vegan margarine and soy milk together and add sugar and cocoa. Bring to a quick boil to dissolve sugar, then reduce heat to low and stir in peanut butter, just until melted.
Remove from heat and stir in remaining ingredients. Allow to cool slightly. Spoon about 3 tablespoons of mixture at a time onto wax paper and press lightly to form a cookie shape. Chill until firm.
