Dairy-Free Creamed Spinach and Mushrooms
Per 3⁄4 cup
1⁄2 onion, diced
2 cloves garlic, minced
11⁄2 cups sliced mushrooms
2 tablespoons olive oil
1 tablespoon flour
2 bunches fresh spinach, trimmed
1 cup soy milk
1 tablespoon vegan margarine
1⁄4 teaspoon nutmeg
Salt and pepper, to taste
Sauté onion, garlic, and mushrooms in olive oil for 3–4 minutes. Add flour and heat, stirring constantly, for 1 minute.
Reduce heat to medium low and add spinach and soy milk. Cook uncovered for 8–10 minutes until spinach is soft and liquid has reduced.
Stir in remaining ingredients and season with salt and pepper to taste.
