Chocolate Fudge Mousse with Coffee Whipped Cream
Per 1⁄4 recipe
1 package Jello sugar-free and fat-free instant chocolate fudge pudding mix
2 cups cold skim milk
3⁄4 cup heavy cream, chilled
2–3 tablespoons granulated sugar
1 tablespoon prepared, very strong coffee, chilled
Combine the pudding mix and milk in a medium-sized mixing bowl. Use an electric mixer to beat for about 11⁄2 minutes, until smooth. Equally divide the mixture between 4 parfait cups. Set aside for 5–7 minutes.
Put the cream in a medium-sized mixing bowl. Beat the cream until it just holds its shape. Sift the sugar over the cream and continue to beat until soft peaks form. Stir in the coffee and mix just until blended. Refrigerate until ready to serve.
To serve, top the pudding with equal amounts of coffee whipped cream. Served chilled.
