Almond Fruit Cocktail Float
Per 1 square
2 tablespoons unflavored vegetarian gelatin, such as agar flakes
11⁄2 cups water
1⁄2 cup boiling water
2 cups evaporated milk
1⁄2 cup granulated sugar
1 tablespoon almond extract
1 15-ounce can fruit cocktail
In a medium-sized bowl, add the gelatin to 1⁄2 cup water and let it sit for 2–3 minutes to soften. Pour the 1⁄2 cup boiling water over the soaked gelatin and stir until dissolved.
Stir in the remaining 1 cup water, and the milk, sugar, and almond extract. Pour into a 9″ × 9″ pan. Chill in the refrigerator until firm.
To serve, cut the chilled gelatin into 1-inch squares and serve in individual serving bowls with the fruit cocktail over the top.
