Per 1 cup
4 firm ripe pears
1⁄4 cup brown sugar
4 tablespoons (or more to taste) red wine vinegar
4 tablespoons honey
1⁄4 cup chopped walnuts
1⁄4 cup unsweetened coconut flakes
Preheat oven to 350°F.
Cut the pears in half, remove the cores and stems, and cut into chunks. Sprinkle the brown sugar over a nonstick baking pan. Lay the pear slices on top of the brown sugar.
Mix together the red wine vinegar and honey. Drizzle the mixture over the pear slices. Sprinkle half the pear slices with the chopped walnuts and the other half with the coconut flakes.
Bake the pears for 25 minutes or until tender. Let cool briefly, and serve while still warm.
