Per 1⁄2 sundae
2 large bananas
1⁄4 teaspoon ground cinnamon
1 teaspoon cornstarch
2 teaspoons pineapple juice
1⁄4 cup Greek vanilla yogurt
1⁄4 cup canned crushed pineapple
2 teaspoons liquid honey
Peel the bananas and slice lengthwise. Sprinkle ground cinnamon over the bananas. Mix the cornstarch into the pineapple juice and set aside.
In a small saucepan over medium-low heat, whisk together the yogurt, pineapple, and honey.
Increase heat to medium high and add the cornstarch and pineapple juice mixture, whisking constantly until thickened.
Spoon the mixture over the bananas. Sprinkle extra cinnamon over the top if desired.
